In the book Dictionnaire universel du pain by Jean-Philippe de Tonnac, the entry for COULAGE says COULAGE (eau de) - Voir EAU DE COULAGE.
Under EAU DE COULAGE, here's what it says:
Eau qui entre dans la recette du pain...Sa quantité est le plus souvent exprimée en litre pour 100 kg de farine...
