Cod 'al pil-pil' Explanation: Cod 'al pil-pil' Ingredients Ingredients for 4 people 4 medium slices of salt cod cut from the side 1/4 l of olive oil 6 cloves of garlic 1 chili pepper Preparation Leave the cod to soak for 36 hours, changing the water 3 or 4 times. Then remove the scales and the bones and dry well with a cloth. Finely slice the garlic and fry in the olive oil in an earthenware dish over a low flame When it starts to brown, remove and put to one side. Add the cod to the same oil and cook over a low flame for around 10 minutes depending on the thickness of the slices. Place another earthenware dish over a flame and add some of the oil from the cod.When it is warm place the slices of fish in the pot with the skin facing down. Move the pot gently from side to side and at the same time slowly add the remaining oil. cod "pil-pil" Explanation: Good luck! Recipe details: Cod "pil-pil" is without any doubt the most popular way to cook Cod. There are several traditional fiestas where People cook cod "pil-pil" in crowded contests. To cook cod this way for four, you will need four cod pieces, four cloves of garlic, virgin olive oil and four dried chilli peppers. Soak the cod the previous day changing the water three times. Cook the cod in a saucepan with plenty of water until it starts boiling. Remove the saucepan from the stove and remove the cod from the saucepan with care, drain it and place on a towel. In an earthenware pot, fry the chopped garlic and half the chilli cut in small slices in plenty of oil. When the garlic is brown, remove and put the slices of cod in the pot, separated and with skin side on top. Shake the pot constantly in circles over a medium heat adding a bit of the water used to cook the cod. As the pot is shaken, the sauce will thicken to a jelly-like texture. At this point the dish is ready to serve.
