Is this something like thyme/rosemary-scented, herb-scented? Mountain/forest aroma doesn´t sound too good .)

@ Oliver That's a very interesting idea but I'm not sure it relates to all dishes, as some say 'en aroma de monte'. See one of the examples I provided.

Aroma del monte I think the reason that thius term is common, while being difficult to translate is that certain foodstuffs, like jamón ibérico ,are dried/cured in the (refined) mountain air so this has become a synonym for freshness and healthiness. Therefore I think you need to build on this concept with a translation that will end up being not very literal, like 'as fresh as the mountain air'.

with mountain herbs - makes me think of them growing up there on the hillsides getting baked in the sun with all their volatile aromas sealed in, powerufl and intact :-)

agree philgoddard : I think you should leave out the "aromas". But I agree that a literal translation is best, since this is a menu item and not a recipe.

Thank you Phil - yes, for most of the examples just "(with) mountain herbs", though sometimes maybe "mountain herb-scented"

woodland aromatic

First, I'm not sure that the "monte" of which these things are supposed to smell is exactly the mountain or the forest. I think "monte" suggests wild and partially wooded upland, and also that the "monte" is associated with hunting. So it brings associations of wildness and freshness.

Then again, I found this rather interesting quotation to suggest that it can imply an almost pungent, pine-resiny kind of aroma. It's talking about game birds:
"Estas carnes, a menudo tan correosas como caras, contienen el aroma del monte, un intenso sabor cuyo origen reside en la alimentación de las aves. El urogallo huele tanto a abeto que los cocineros atenúan como pueden su sabor a resina" ( http://dialnet.unirioja.es/servlet/fichero_articulo?codigo=2... )

Finally I thought it would useful to see what actually goes into a recipe called "aroma del monte". I found one for "Tulipa crujiente con flan de atún y salsa agridulce y aceitunas negras al aroma del monte", the sauce for which contains black olives with oregano, thyme, rosemary, parsley and paprika, so yes, it's a herb kind of thing, as you suspected.

I think you want something descriptive, rather than just "with thyme and rosemary", or something, so how about that good old standby "aromatic", combined with "woodland", which sounds quite nice to me and puts us in the right area, I think. How you fit it in will depend on the recipe.

disagree Yvonne Gallagher : none of the herbs mentioned e.g rosemary, thyme grow in woodland, they like dry (hilly/well-drained=monte) sunny soil //sorry but the En. "woodland" does not conjure up monte bajo:-)

This is Spanish woodland, monte bajo/bosque mediterráneo. N. European woodland is different. Note "bajo". // So what do we call it? It's NOT mountain or open country. It's very commonly called woodland. Scrubland is possible, but doesn't sound good!

No he encontrado nada con "aroma de monte", pero "aroma de monte bajo" parece un término muy usado en enología, y se refiere al tipo de hierbas que crecen en el "monte bajo", particularmente el tomillo y el romero.
