Processing I think this is the essential idea. In the source cited both by Jenni and Ana, there is a section on this:

"Mercado nacional de carne industrial para la transformación o verdeo:
Un grupo importante de empresas se dedican a la producción de carne para su uso industrial en transformados cárnicos."

I take this to mean that "verdeo" is "transformación", in other words, processing.

The classic meaning of "verdeo" is selling freshly-killed meat:

"verdear. Vender carne de cerdo recién sacrificado (Voc. And.).
verdeo. Venta de carne de cerdo recién sacrificado"

The point, I think, is that "verdeo" is contrasted with curing. It implies fresh lean meat products, not actually lumps of fresh meat but "transformados".

Entiendo que se trata de vender su carne o sus "subproductos", frescos y magros. No sé cuál es la traducción.

Right, o.k,... It seemed a longshot to me, but it's the only context where I've come across the word before; Could it be the basic cut state of the meat, prior to undergoing further processing of whatever kind?

I don't think so It is some kind of handling process between butchering, freezing and dispatch. But thanks for the suggestion.

Verdeo A verdeo is usually a scallion or green onion; is it referring to the state of a roasted pig left on display with an onion stuffed in its mouth? Just an idea...

I'm having second thoughts about this. I thought that "greening" was used to mean "curing" as well as spoilage. But now I'm not sure where I got that idea from!

Small pigs referred to as "verdeo" are generally preferred for general use in processing and packing plants as they are lower in fat and more manageable to work with on the line. I couldn't find any exact match. (Another form of verdeo according to M. Moliner is the harvesting of green olives for curing). This seems to fit the progression of steps in the list, but as frequently happens, the author has a mixed list of activities and products (despiece...congelados). This kind of lapse by writers drives me wild, but it is very common in Spanish. When in doubt, query.
