The whole interpretation of the EEG:
Tracé electroencéphalographique réalisé aux aiguilles donc sur 6 déivations retrouvant une activité de fond globalement ralentie de type theta aux alentours de 6 Hz. Malheureusement les régions bi-occipitales sont inexploitables sur cet EEG (shunt?)

characteristic recruitment pattern (on the EEG)

When checking for epilepsy we look for "recruitment" of electrical activity - the process of abnormal brain waves inducing similar abnormal waves in adjacent neurons.

From its use in the two places in the source text, I think that critique is being used with the meaning of "characteristic (of an epileptic pattern)".

The physician notes that the chewing movements recorded by the jaw sensor do not coincide with brainwave features characteristic (of epilepsy). One concludes from this that the chewing movements were not due to epilepsy.

I do not read EEGs but the technique described here is similar to what we do with EKG Holter monitors, in which we try to correlate the patient's reported sensations with the corresponding electrocardiogram patterns to see if the sensations are coming from the heart.
