Atún Mechado a la Manteca Blanca
Now I understand what this is, but my problem is how to make it sound appetising. "Tuna Fish Larded with White Lard" is going to have people running out of the restaurant, covering their mouths with their napkins. And I know that's redundant, but "Larded Tuna Fish" doesn't sound great either. Anybody know a fancy culinary term for mechado or manteca?

bacon-stuffed tuna in white butter sauce
mechar: according to the gran diccionario larousse de la lengua española, this means "poner tiras de tocino en el interior de un ave o trozo de carne para guisar". therefore, bacon-stuffed would be a good option for "mechado". either way, mechado also means simply "stuffed", so you can use: Stuffed tuna in white butter sauce if you're not sure what it's stuffed with.

Comment: "Sorry to take so long to grade this. I asked the client whether the manteca blanca actually went inside the fish or was a sauce, and they never replied. So I will never know for sure, but now I think the tuna is stuffed with bacon and in a beurre blanc sauce. Thanks for helping me see it another way."

Just a thought. I think larded is ok, but "manteca" refers to "butter", that's for sure, not to lard which is "manteca de cerdo", i.e., fat.

I assume that the tuna is grilled and THEN the white-butter-based sauce is poured over it. Ok, it can be fried over white butter (but yech!). I suggest the above: tuna (fish is redundant, dontcha tink?) on (or with) white-butter sauce.
