En principe 'épaisseur' suffit, les pros sachant comment on la mesure. Pour un public plus général que l'on veut noyer sous la technicité, on pourrait préciser 'épaisseur mesurée au *nom choisi pour l'appareil*'.
'Palpeur' ést un peu 'jargon'. D'autres termes sont 'micromètre' ou 'comparateur'.
