En aviation se cabrer is to nose up. I assume they are talking about pilot training and require the student to check the throttle (les gaz)until the plane starts to take a nose-up attitude (assiette à cabrer).

Well in English, you've got

Revolutions, manifold pressure and prop pitch (unless it's a fixed pitch unit)
Pitch = torque (like a gear box) so I would go with "prop pitch".

Steps for flight are: Start engine, flat pitch prop (first gear) full throttle (take off) bring back mixture (manifold pressure) adjust prop pitch (change gears for exonomy)fly away.

pitch up (misleading)

"couple" here is misleading since the expression has nothing to do with engine torque.

As evidenced by Google hits, "couple à cabrer" refers to the attitude of an aircraft, and it need not even be powered, applying also to paragliders, hanggliders, etc.
