Paraphrasing would avoid the sentence sounding too gallic. Essentially, hydrophilic surfaces (ie easily wettable) have a great attraction for water.

FYI this entry is for information only...
I know nothing in this field but "capacité d'accueil de molecules d'eau" means it can "keep" water molecules in it... not a surprise as both surfaces and the "collage" are hydrophilic.
capacité in this context means "ability to"...
