Explication : dans 100 g de protéines (décomposées en acides aminés élémentaires par exemple par la digestion) il y a 16 g d'azote provenant des acides aminés (formule générale : NH2-R-COOH) correspondants aux protéines. La formulation est un peu curieuse, je dirais qu'il faut interpréter la barre de fraction comme "correspondant à" ou "contenant" d'ou ma traduction globale: 100 g de protéines = 16 g d'azote provenant des acides aminés des protéines.
