In a statement by the master of a ship denying that oil pollution had been caused:
"la scia dell'elica della nave era pulita, i baffi e tutta l'area circostante la nave non mostravano segni d'inquinamento"
There is a nice explanation in Italian and a picture in http://web.tiscali.it/vanni_38/idra23.htm, but I have no idea what these might be called in English.

Ho sempre sentito chiamare così l'acqua sollevata dalla prua e spezzata in due "scie"... Sì, il prof. Caruso è stato più preciso di me nel descrivere il fenomeno ;-)
Cercando "bow wave" + Bernoulli trovi parecchi esempi, anche con descrizioni che corrispondono perfettamente a quella del sito che segnali.
