My doubt is, can you refer to something as 100% vegetable when referring to fruit? Or should it be 100% fruit/plant? (for example).

Simply translating it as 100% fruit is also a good option, though in this case it seems plant fits best.

However if the extract is actually a dietary supplement, then you could of course use "herbal".
