Or cebollas apochadas. As I understand it (speaking as an amateur cook), this refers to gently cooking chopped onion in oil so that it turns juicy and soft but doesn't fry (doesn't dry up or turn yellow/brown).

If you watch Carlos Arguiñano, he uses the term quite a lot. (But this job is not for Carlos, in case you're wondering.)

It's mentioned as an ingredient in the description of a bar's specialty pincho (in the Basque Country).

BTW I don't know where this word "apochar" comes from, the (my) dictionary doesn't give it but it is quite familiar locally (and no, it doesn't come from Basque). I expect it has something to do with the term "pocho" as in "se ha puesto pocho", "está pocho" etc. But whatever the etymology, what I need to know is how to translate it when applied to onions!

Some more context I now realise, belatedly, that I was not as explicit as I could have been with the full context in which the term occurs in my text. It's important to know (I did say this, just not very emphatically) that the "cebollas apochadas" in question (and in other recipes for that matter, including Argiñano's where he uses them) are NOT in themselves the pincho, they are just one of its ingredients. Here is the full description of the pincho: "Champiñón relleno de foie con manzana, jamón de Jabugo, cebollas apochadas y ajitos." (Pinchos CAN be very simple indeed, but these are of a highly sophisticated variety!) At this point my best attempt (with all your help) is: "Mushroom with a stuffing of foie gras and apple, Jabugo ham, melted/braised (?) onions and fresh garlic." I haven't sent it in yet, so there's still time for further improvements :-) I apologise for not giving this context from the beginning, I guess I was pressed for time and didn't realise it might make a difference.

Hi aceavila - Noni (1) I'm assuming UK (just because you have to assume something to be consistent). (2) I know, I also looked up apochar there, it's nowhere to be found, but Arguiñano among others obviously hasn't been told that and I'm confident about the meaning. (3) Your presumption is correct.

How very strange. I just looked in DRAE to reinforce a planned comment about apochar being a typo for pochar, but I see that the latter doesn't "exist"!! No matter, even if doesn't "exist" we ProZians can still translate it!!

This is only going by your own description of how they are created. There's nothing wrong with any of the other answers, but the term for frying onions very gently in oil or butter until they just turn transparent (ie, no colour change, and not crispy/dried out) is: "melting"

I think that "braised" is normally in a closed container (according to the OED), so that's why I added "pan"!

i see them as Alan describes above - a bed of onions is what I visualize. Perhaps on consideration *a bed of onions* might be another alternative!

having looked at other references, it's used both as a cooking term and as a description for a dish. btw, with all that "nouvelle cuisine" going around, new terms and phrases are being coined left, right & centre! as with any translation, your better judgment will decide whether you can go for this option or not. i'll try to check out the other references and include them later. good luck and bon appétit! :-)

Thanks. I was actually also wondering whether the term "apochar" might be a cognate of "poach" (rather than coming from "pocho")! Not that that is the issue here, of course. "Poached onions" does sound just a little bit strange to my native, but possibly ignorant, ear, despite all those recipes. Perhaps as a cooking term, but as a description for a dish?? If anyone else out there would like to second this suggestion, that might boost my confidence a bit...

agree claudia bagnardi : I think this "apochada" comes from "poché" like the "huevos poché" i.e. not entirely cooked. Translation: "poached egg". I'd go for poached onion, Alan. I've done it myself (with onions) and its very tasty!

hi trudy, yep, you're right, that's exactly what it means, but when you gently braise the onions and they yielding all their water, you end up poaching them.. believe me, that's what i do to avoid using any fat when sautéeing.. (getting hungry here!) :-)

Main courses are big and reliable, with prices to match. I was most impressed with whole roasted bronzini ($31), the European sea bass also called bronzino. Delpha told me it was farm-raised in Greece and, of all places, the United Arab Emirates, giving rise to visions of a peaceable new kind of international trade. Served simply on a bed of sweated onions and fennel (with seasoned salt and a bit too much of it), the fish was sweet, meaty, terrific.

Dice the other onions finely with the spooned out interiors. Sweat the onions in olive oil until they are lightly golden, add salt and pepper. Cut the celery stick into very small pieces, and crush the grilled pine nuts with a knife (you can grill them in the grill or oven). Away from the heat mix the sweated onions, diced celery, pine nuts, ricotta, the salted pork fat, sage, parmesan, chopped parsley, salt and pepper.
