No hay que olvidar que el pueblo se asienta sobre un cerro yesífero, y en su ladera todavía se encuentran restos de hornos dedicados a esta industria

I think that translating this term as "Gypsum Hill" shows aspects of second language contamination. Using the terms Gypsum deposit, Gypsum mine or Gypsum quarry would convery the concept far better in English. My translation of the phrase:
It shouldn´t be forgotton that the village lies on a hill containing Gypsum deposits, and remains of ovens dedicated to the extraction of this mineral can still be found on the slopes.
It is necessary to add the word "extraction" here because "cerro yesífero" has connotations of quarries or mines for the extraction of said mineral.
Muchos saludos.

gypsum (bearing) hill (side)
In other words, historically there was gypsum "industry" here, for making plaster etc.

"Gypsum (hydrated calcium sulphate) has been quarried or mined at Kirkby Thore for over 200 years. The gypsum is ground to a powder and heated to evaporate water. Heating to approximately 160ºC drives off a limited amount of water and Plaster of Paris is produced. The most important use of this type of gypsum is in the production of plaster and plasterboard." http://www.visitcumbria.com/gypsum.htm
