Should you choose to use a FR term (?...), then Iberian "Cochonnailles" would be more appropriate for "Ibéricos".
"Assiette/Plateau de charcuteries" sounds cheaper, less "gourmet". It's in use in ordinary restaurants like cafés and brasseries, whereas "cochonnailles" is more "terroir"-oriented, like "ibericos", more appetizing...

I normally use platter for tabla in this context.

There's a perfectly good translation available there for ' tabla de ibéricos'; I didn't search further, but I imagine there's entries for your other terms too.
