*INFUSIÓN DE TOMATE* CON BACALAO

CREMA MONTADA DE PATATA

INGREDIENTES BASE
Gelée de tomate, crema de patata con un poco de jugo de carne, cebolleta frita, bacalao desalado y su relleno de ajoarriero, salsa de tomate.
ELABORACIÓN Y PRESENTACIÓN
Es fundamental el colado y decantación de los tomates maduros para obtener, después de un largo reposo en presión de sus carnes, un líquido transparente con toda la esencia de la hortaliza.
Aparte de esta “agua de tomate” se le añaden un par de hojas de gelatina en frío y se combina con la otra parte del líquido en caliente para obtener la gelée después de bien disuelto todo, batido con la varilla y dejado enfriar.
El toque de patata del plato lo aporta una espuma de su crema, también en frío y metida en sifón a la hora de servir sobre el cilindro de bacalao, previamente cortados sus lomos en forma horizontal sacando láminas de unos 2 cm. de grosor y dando la forma deseada para meter al horno tapado con papel film, y relleno de un ajoarriero clásico con salsa de tomate.

When gelatine is used, the result is usually referred to as "aspic" in English, and in fact the writer has used the French term for aspic, gelée.

agree Isamar : I'd go with "gelée" if it's appropriate with the style of the menu and also as the end result is more solid than liquid given that gelatine has been added. Yes, it depends on the restaurant or style of cookbook.

Thanks Monique: personally, I prefer to use English if an appropriate term exists, but it's true that many writers and restaurants like to use French.

"Infusion" here refers to the concentrated "essence" or liquid obtained from the preparation process.

Why not "tomato infusion"? Plenty of examples, and given the description below the recipe title, that's exactly what it is and how they want it to be expressed ("agua de tomate" etc.)
