On emploie le terme consacré "noyer" (cf lien ci-dessus) quand il y a trop d'huile par rapport au jaune d'oeuf.

disagree Tony M : No, it's really almost the opposite: if there is too much oil in proportion to the egg yolk, it cannot 'lier' it and the emulsion breaks down; the amount of egg yolk is 'drowned' by too much oil.
